Hole in a wall place, simple hawker fare in George Town at night. You can order hor fun and some homemade drinks like boiled nugmet.

Maybe that’s what it means by a Living Heritage. The old uncle stirred the best tastiest Hor Fun ever! He is generous with the seafood: read succulent prawns, fish meat, pork, eggs (if you ordered as such), look out for cubes of lard on the table that is optional to your liking. Eaten best with their home made sambal paste or cut green chilly. Another good dish is the Yee Mee. For RM5-7 per plate, you won’t regret the taste and will be addicted to come back for more like my Brother from Kuala Lumpur. Lol. He starts working around 6pm and quickly finishes before 9.30pm. #TipsForTrips: So get there early! Many regular customers come for the takeaway. On the sideline is the delicious local coffee that is aromatic and thick ‘kao’, the opposite stalls sell koay teow soup that is popular too.

My pilgrimage location.... Every time I am back to Penang! :) The broth rich with eggs & the "wok hei" + 2 large prawns..... So irrisistable!

Decades of cooking this street staple daily from 6pm still has not taken it to greater heights. Now assisted by his two boys, the old gentleman cook may need to tweak his recipe of noodles cooked with twin prawns, single fish fillet and pork slices. Both Char Hor Fun(RM7) as it is locally known, or Cantonese style noodles and Penang's signature Hokkien Char noodles (RM7) suffered from a light touch and overwhelming MSG treatment. My best advice is to upgrade to a charcoal stove to enhance wok hei, and to make a good stock base from chicken and pork bones (something the Koay Teow Thng stall across the street can give a tip or two). Umami can be further enhanced from fried pork lardos, squid and dried sole bonito sorely missed in this concoction. The accompanying sambal chilly for the Hokkien Char showed promise but lacked punch, short of belacan, calamansi and spicy chilly padi. Without moving this dish forward, one cannot compete with even the average that KL offers, perhaps only Singapore will accept such bland food. At this rate, his two sons are better off working in local industry, there is no lasting culinary legacy here yet.
