Nothing spectacular about tongshui .
The fried dough are not very high sifu skills..
Wrong dough mix if you use same grade flour for youcharkuey and hamchinbeng.
Youcharkuey not long and crunchy and bad oil taste.
Hamchinbeng no 5 spice fragrance and not fluffy puff meaty inside comes out hot oil like balloon then flatten like air out of balloon .. Too many bubble air pockets inside and too salty. You don't know how to balance it with sugar ? Yes old sifu days their hamchinbeng are a balance of sugar salt 5spice with proper oil fry they come out fluffy fully meaty inside like eating oil fried donuts/bread..
